How quickly can I get something written before my laptop bogs down again? For tomorrow, I'm in a non-religious way wanting to do penance for a weekend filled with lobster and short ribs. To me, that means lots of veggies, and the best way I know for something quick is a tofu stir fry over rice. I like to use a defrosted bag of Seapoint Farms Oriental Mix veggies as a starter for my veggie portion, to make everything even easier. A base of peanut oil, toasting in some ginger, red pepper, and garlic, then whatever you want to throw in does the job, then served over rice. Whole Food's organic broccoli at $1.99 a pound through Tuesday is a good bet.
Tuesday is our usual reheat of something big made over the weekend, which this week is the corn and cod chowder from Food and Wine magazine. A salad on the side, and that's all we'll need.
For Wednesday, the $3.99 a pound sale on ground turkey at Sprouts through that day has me thinking about some version of turkey burgers. One very easy one we like is spicy turkey burgers from Bon Appetit. You can certainly do it with rolls, but it's also really good open faced on toast or without any starch at all.
Thursday is looking like stir-fried beef, broccoli and yams from Bon Appetit, having stocked up on that organic broccoli from Whole Foods mentioned above by Tuesday. Through Wednesday, Sprouts has beef stew meat that's great for this at $3.99 a pound, and they usually have some of the best prices in town on organic yams as well.
