No time to go chasing links, so here's a quick outline. It's roasted green chile season and high season for local corn, so with the Lucky's in Longmont practically giving away boneless center-cut pork chops through Wednesday at $1.97 a pound, tomorrow's going to be a big pot of pork green chile with corn.
We also need to use more of that 88 cent a pound asparagus from the Longmont Lucky's, and since that store also has a stunning special on domestic prosciutto this week at $9.99 a pound, Tuesday will have to be the risotto with asparagus and prosciutto recipe that I've mentioned in the past. Search box on this blog should work, or you can just Google it.
Wednesday will be our reheat, the glorious green chile again.
Then Thursday will practically be cook's night off, doing pasta with that wonderful Spinelli's local pasta sauce I've previously mentioned, on sale for just $3.99 a jar (usually closer to $7) at both Lucky's stores through Wednesday. Maybe more of that prosciutto will go in too.
