No brilliance here. Our weekdays are simple, and tomorrow's will be exceptionally so. With Near East side dishes BOGO at Sprouts and a freezer full of boneless chicken breasts from one of the Lucky's grand opening sales (chicken breast tenders are also available as an option at Sprouts this week for $2.49 a pound), I'm reminded of a quick and easy comfort food I haven't done in forever, rice pilaf with diced sautéed chicken mixed in.
Tuesday is our reheat of something big made over the weekend, which this week is corn and cod chowder from Food and Wine magazine.
Still in comfort food mode, for Wednesday I'm liking baked potatoes with spiced beef chili from Bon Appetit. The recipe calls for burger, but I also like to make it with stew beef, which Sprouts has for a very good $3.99 a pound through that day (or you could cut up their $2.99 sirloin tip steak), or spring for a bit more at the new Lucky's, where Teton Waters Ranch grass-fed stew beef is $4.99 a pound through that day.
Thursday is still undecided, and that's increasingly become the day for whatever the salmon burger sale of the week at Whole Foods is. Quick, easy, tasty, and healthy to boot.
