Time marches on, and we'd better get going with weekday dinner plans. For tomorrow, I'm thinking about the very lean (93%) grass fed burger that's $2.99 a pound at Sunflower, which is leading me towards doing a pasta Bolognese with it, such as this one from Cooking Light (simplifying by using all burger rather than a mix of ground meats). A salad on the side, and it's dinner.
For Tuesday, we always have something big made over the weekend that serves as an easy midweek reheat, and this week, it's smoky shrimp and halibut stew from Bon Appetit. Since this calls for another side salad, don't forget that there are good deals on organic tomatoes this week, with romas $1.49 a pound at Whole Foods (through Tuesday) and on-the-vines $1.99 at Alfalfa's (all the way through June 28th).
Moving on to Wednesday, we'll be in the mood for something rice-based by then, and I was really impressed by Cooking Light's recent spring risotto. It's a great use of edamame, and the addition of low fat cream cheese adds a lovely richness. If we don't want to make it a completely vegetarian meal, we might catch the tilapia burgers while they're still on sale at Whole Foods through Tuesday, since they were really, really good when we had them last week, and sauteing them couldn't be easier.
Finally, for Thursday, we simply can't let the week go by without enjoying Sprouts' outstanding deal (catch it by Wednesday) on center-cut pork loin chops. They're excellent, and at $1.99 a pound, some should go in the freezer too. Simply sauteed and a pan sauce made with a bit of garlic and wine to deglaze it, some microwaved "baked" potatoes, plus something green (maybe from Wednesday's Farmer's Market) and you're done.
And that will get us through to next Friday's planning. Enjoy this beautiful Sunday.
