Cure's Done With Pea Shoots

My luck, planning on using them tonight, my favorite Cure Organic Farm has finished with their over-wintered crop of pea shoots (glad I caught them last week). The current crop is slated to complete its pea destiny, I think he said as sugar snap peas. I expect there still will be some organic pea shoots to be had at tomorrow's Farmer's Market. Meanwhile, I'll experiment with substituting Cure's beautiful baby arugula in tonight's dish.
