Quick roundup of what's ahead. We rarely have ground beef in this house, but with Whole Foods' one-day sale on it today (see a few posts below), where at least at the Pearl Street store they track how freshly ground it is by the hour, we'll head for the beef tonight with baked potatoes with spiced beef chili from Bon Appetit.
Looks like tomorrow's dinner will be another indulgence that will come from Whole Foods, as I'm liking the idea of the halibut they have at the still-not-quite-so-friendly sale price of $19.99 a pound through Tuesday. We can do some Lundberg black Japonica rice on the side, having had potatoes tonight and about to plan pasta for tomorrow. The only question is that with our relatively mild temperatures, do we ask the family griller to head outside in the dark to cook a fine piece of fish?
For Sunday, we'll be looking for something big for a midweek reheat, not involving potatoes or rice since they've already had their turns, and vegetarian would be a nice option to mix in. Combine those criteria with the organic collard greens on sale at Whole Foods for $2.50 a bunch through Tuesday, and what comes to mind is baked rigatoni with ricotta and collard greens from Cooking Light. I'll be stocking up on DeLallo whole wheat pasta when I get to Sprouts, and I'm betting rigatoni and/or penne are included in the $2 sale.
Which gets us through a rather pleasant-looking weekend.
