Saturday, July 18: 11:00 a.m. - 2:00 p.m., Cure Organic Farm in Boulder
You’ll learn traditional jam making techniques without the use of added commercial pectins. This method yields a softer set jam with the sweetened but true flavor and cooked texture of fruit, and will allow you to experiment with fruit combinations and the addition of the flavors of herbs, spices, wines and liquors on your own. You learn a few ways to determine if the jam has “set,” including altitude adjusted temperature measurement and appearance at various stages of cooking. You’ll also learn how to water bath can the jarred jams to ensure they’ll last a full year on your shelf, if you don’t eat them before then! You’ll take home finished jars of jam of a seasonal fruit, plus fruit prepared to cook and can at home the next day.
