Happy Father's Day, happy Sunday, which brings us to the question of what's for dinner for the rest of the week? With very big 16/20 count raw shrimp being featured for $6.99 a pound at both Sprouts (through today only) and Sunflower (through Wednesday), I'm thinking tomorrow will be spicy shrimp and fettuccine from Cooking Light. A side salad with my own homemade buttermilk dressing will round things out.
Tuesday is our usual reheat of something big made over the weekend, which this week is salmon chowder from the Whole Foods website. I've really been on a roll with fish and seafood, going on two weeks now. Another salad will be on deck to complete the meal.
For Wednesday, if I have the good fortune to get to the Wednesday Boulder Farmer's Market, or more conveniently, to the Cure Organic Farm store at 75th and Valmont, we'll revel in more of our spring greens, since at 7:09 pm we'll officially be into summer! With the greens (which usually remain available well into summer, too), we'll do spicy stir-fried chicken chicken and greens with peanuts from Bon Appetit. Sunflower has boneless skinless chicken breasts for $2.99 a pound through Wednesday, but I've got them from a better price in my freezer.
To round out the planning, I'll grab more of those big sale shrimp at Sunflower by Wednesday in order to make shrimp risotto with peas from the New York Times, one of their "recipes for health." This would be good with more of those spring greens tossed in as well.
Which quickly gets us through to Friday's planning.
