Super quick dinner plan rundown. With MSC-certified wild sockeye salmon $7.99 a pound at Whole Foods for today only, sockeye will be what's for dinner. With a high expected of only 49 and evenings totally dark, it will probably go on the grill pan or under the broiler, rather than outside on the grill. I love the Lundberg gourmet rice blends that Vitamin Cottage has on sale for $2.39 (a one pound bag) as a festive side for fish.
Sounds like the weekend will finally head us into winterish territory (although we're still technically in autumn), so we'll go for comfort food with potatoes romanoff from my venerable copy of the Vegetarian Epicure tomorrow. Since practically everything's been reposted to the web, even from such old cookbooks, you can find the recipe here. With organic russet potatoes just $1.79 a five pound bag at Vitamin Cottage, this will also be a super cheap dinner to make, in addition to hitting the comfort food spot. We'll stick with the vegetarian option, but carnivores might consider it a side to the London broil Sprouts has through Wednesday for just $2.99 a pound.
With snow expected tomorrow night into Sunday morning, and Sunday's temperature maybe no higher than 18 degrees (!! - what a change after the 60s we've had for weeks), a warming soup will be in order for Sunday. With chicken breast tenders $1.99 a pound at Sprouts, I'm thinking it will be chicken posole from Food and Wine magazine. I prefer to make it with white meat instead of the dark called for in the recipe, but that makes me a complete wuss when you consider the recipe originated with veal head.
Stay warm and safe through our weather change.
