Taking The Nettle Challenge

So  my Red Wagon Organic Farm CSA has thrown down the gauntlet right from the get-go, challenging me to try cooking with nettles. (Sure I had the option to take other herbs instead, but why go with the ordinary when you can get nettles?) It looks like tonight will be an experiment with a pizza topped with Taleggio, fontina, pancetta, and of course, nettles. They evidently can't be touched directly when raw, so gloves or tongs are required to blanch them, at which point the "stinging" aspect of them disappears. This will be fun, cooking with a foodstuff that wants badly to hurt me.
