Memorial Day Dinner
I usually figure out all the rest of the week's dinner plans by Sunday morning, but with the holiday, that doesn't seem to be happening. Is it that we get even busier around holidays, or does the extra time throw our time management skills out the window? In any case, the plan for tomorrow is to put some of the fine American Homestead boneless country style pork ribs that Whole Foods has on sale for $3.99 a pound into the smoker for a good long time. Country style ribs also work well on a grill, if you don't want to dedicate the time to smoking. We'll counter the rib decadence with light and fresh potato salad from Cooking Light, which uses rice vinegar instead of mayonaise, and other veggies practically outnumber the potatoes. Some corn on the cob (obviously not yet local, but it is domestic, coming in from California and Florida), and we'll have a feast.
