Happy Friday, time to get dinners planned. Tonight's looking like our best grilling night of the weekend, so it will be outside for some salmon. I missed out on the Norwegian salmon deal mentioned in a comment by Ms. A., so it looks like I'll have to content myself with the Atlantic at Sprouts for $8.99 a pound. (But at least we're getting very close to the fresh wild season - very close indeed.) Although we have a long way to go to our local corn season, the arrival of fresh domestic corn from Florida and California this week (I've seen it at Whole Foods, and Sunflower is advertising it) prompts a celebration with grilled salmon with roasted corn relish from Cooking Light. My frozen supply of roasted chiles from last fall's season will be of help with this, too.
For Cinco de Mayo tomorrow, I'm thinking a posole will be on deck, probably a shrimp and scallop posole from Bon Appetit, although a classic pork posole would be good too. Sprouts has the best deal on the shrimp, with 26/30 count ones already peeled and deveined for $5.99 a pound, but scallops don't seem to be on the sale radar right now.
Since Sunday evening holds out the promise for a little rain (dare we hope?), we'll settle in for some comfort food. With boneless skinless chicken breasts just $1.99 a pound at Sunflower, it will be quick coq au vin from Bon Appetit. As coq au vin recipes go, it really is pretty easy, yet it gets four forks out of four in its reviews.
Which gets us through to Sunday's planning. Happy weekend!

ReplyDeleteJust to clarify, the Norwegian salmon is available on an ongoing basis at King Soopers until some unknown point in the future when they no longer have a supply. They currently still have it in stock (at least they do at "my" King Soopers), so you could feasibly use it for your lovely grilled salmon tonight if you haven't already purchased your salmon elsewhere.
Ah, "your" King Soopers is indeed the fortunate one. I stopped by the one on 30th Street on Thursday, and their fish department knew nothing of any Norwegian salmon availability. Enjoy your special stash, and the new fresh wild season should be just around the corner!
