Given that it's Memorial Day weekend, this will be a weekend dedicated with grilling. For tonight, I splurged on the fresh Scottish salmon that's $14.99 a pound at Whole Foods, so something like that will be left to shine on its own on the grill, perhaps with a special side, as in grilled salmon with roasted corn relish from Cooking Light.
With boneless, skinless chicken breasts $1.99 a pound at both Sprouts and Sunflower this week, tomorrow will be grilled chicken and ratatouille from Bon Appetit. The ratatouille makes a glorious veggie side, suitable for accompanying lots of additional possibilities. I'll be making plenty of both components, as this will also serve as our quick Tuesday reheat.
With runners in the family and the Bolder Boulder on Monday, Sunday will be a carbing up evening, possibly Cooking Light's very lightened version of fettuccine Alfredo, for a vegetarian option. But I'm a little inclined to skip dairy altogether, going with a high quality pasta sauce such as my favorite Muir Glen, dressed up with sauteed onions, mushrooms, and peppers, plus some freshly grated parmesan on top of whole wheat fettuccine or spaghetti.
Monday preview: for Memorial Day, the American Homestead country style pork ribs from Whole Foods (on sale for $3.99 a pound) will be going in the smoker. The race will be over, and hey, you gotta eat ribs sometime.
