In the middle of a busy holiday weekend, this will be exceedingly quick. I've already covered what's happening through tomorrow in the weekend plans (look a couple of posts below), so there's not much territory left anyway. After four days of outdoor grilling, I plan to head back into the kitchen for Tuesday, with sausage risotto with spring greens from Bon Appetit, assuming I'm able to get a bag of those beautiful mixed greens from the Cure Organic Farm store today. If not, my fallback would be the organic bulk mixed greens and/or spinach that are both just $3.99 a pound at Sprouts, and that's where I'll head anyway for chicken sausage at $2.99 a pound.
Wednesday will be our reheat of something big made over the weekend, which this week is that big 'ol batch of bbq country style ribs, hee haw. Some organic mashed potatoes and the conventional California sweet corn that's six for $1 through that day will make it a snap.
We'll compensate for Wednesday's snarf with a lovely seasonal and vegetarian dish for Thursday, soba with pea shoots, shiitake mushrooms and leeks from Gourmet magazine. I'm counting on the Cure Organic Farm store to still have pea shoots for this one, and nobody has to be a stickler about the shrooms having to be shiitake.
