Albeit belated, but that's what a lazy President's Day weekend will do to one. With our remarkably spring-like temperatures (apologies to my friends and relatives on the East Coast), we'll send the family griller outside in the dark tonight to actually get some of those fantastic $8.99 a pound NY strip steaks from the Baseline Whole Foods reopening sale on the grill. Ribeye fans should take note of those at the same price at the Lucky's Market in Longmont. Asparagus on sale everywhere will go on the side.
Tomorrow will be our reheat of Sunday's big kale and white bean stew from Food & Wine magazine. Sorry there was no time for posting any weekend plans earlier.
For Wednesday, we'll take advantage of these extraordinary asparagus sales through that day for chicken, asparagus and broccoli stir-fry from Bon Appetit. Other local sales also make this a wise choice, but sorry, I just don't have time to record it all now.
For Thursday, I'm looking at those boneless pork chops at Lucky's Market for $2.99 a pound through Wednesday (with their never ever standards) for a quick meal. Microwaved "baked" potatoes (Sprouts has five pound bags of organic russets at a good price) and maybe even more of that asparagus will go on the side.
