Here's something near and dear to my heart, a chile cooking class from Whole Foods (although the "end-of-summer" reference is pretty depressing). Perhaps they really will address using all sorts of chilies, but if the focus will be on Hatch chiles, as I suspect, I'm a stickler for the appropriate spelling of those, which is chiles.
