Weekday Dinner Ideas

Not much time for sitting around blogging on a beautiful summer Sunday, so here's a quick rundown of the rest of the week's dinners.  With summer produce at its height, for tomorrow we'll revel in fresh corn and organic zucchini with the summer celebration that is calabacitas.  Served over brown rice, it makes a great vegetarian meal.

Tuesday is our usual reheat of something big made over the weekend, which this week is another summer fiesta, corn and fingerling potato chowder with applewood-smoked bacon from Cooking Light.  Sunflower has organic leaf lettuce at $1.50 a head and organic romas $2.50 for a six-pack for the side salad.

We need to capitalize on the boneless skinless chicken breasts on sale for $1.99 a pound at both Sprouts and Sunflower through Wednesday, so that day will be a simple saute of chicken breasts, dressed up by a very simple but delicious mushroom sauce from Cooking Light.

We also need to grab some of those boneless center cut pork loin chops that both Sprouts and Sunflower have on sale for $1.99 a pound through Wednesday, so Thursday will be an easy saute of pork chops, pan drippings reduced with a bit of wine, served with microwaved "baked" potatoes (five pound bags of organic russets just $3.99 each at Sprouts through Wednesday.

Which quickly gets us through to next Friday's planning.
