Super quick rundown for the rest of the week. I didn't fit it in for a classic Sunday dinner, but I think tomorrow should be just fine for doing a classic roast chicken with roasted winter veggies (or it could be flipped with tonight's pizza). Whole Foods has excellent air chilled whole chickens nearly half off at $1.49 a pound through the 16th, and they also have organic acorn, butternut, and spaghetti squash at 99 cents a pound through then. No recipe required.
Tuesday is our usual reheat of something big made over the weekend, which this week is our headlong plunge into fall, black bean chili with butternut squash and Swiss chard from Bon Appetit. A salad is all it needs, but if you're in an Octoberfest mood, Whole Foods has beautiful Bakehouse pumpernickel on sale for $2.99 a loaf.
Wednesday will be a real cheat day, probably the boneless center-cut pork chops that are just $1.99 a pound through that day at Sprouts. They also have organic yams for 99 cents a pound for a side, either baked or mashed, preferably with a touch of orange juice.
We'll also capitalize on the boneless skinless chicken breasts on sale through Wednesday at Sprouts for just $1.99 a pound for Thursday's dinner. Since we'll need something rice-based and preferably Asian by then, I'm thinking about Szechuan chicken stir-fry from Cooking Light. Or if I'm too tight for time, a simple chicken stir-fry using frozen Oriental mix veggies probably available in Sprouts' 20% off Freezer Frenzy that will be happening through Wednesday, plus garlic, hot red pepper, and ginger to give it a boost.
So ends a quick dinner planning.
