Weekday Dinner Ideas

How quickly Sunday rolls around. Time to get the rest of the week's dinner planning out of the way on this beautiful Boulder day, before snow moves in later this week.

For tomorrow, the sale at Sprouts is practically demanding that we do chicken, asparagus, and broccoli stir-fry from Bon Appetit, since they have chicken tenders for $1.97 a pound, asparagus for $1.47 a pound, and organic broccoli for $1.49 a pound. Heck, with their 25% off gluten-free, even the Lundberg brown rice that will go at the base of it is on sale. (There's also the great option of organic asparagus at Sunflower for $2.99 a pound, an excellent price for organic.)

Tuesday will be our usual quick reheat of something big made over the weekend, which this week is cod, potato, and fennel casserole from Gourmet magazine. More of that organic broccoli or asparagus could go on the side.

Wednesday needs to be particularly quick and easy for me this week, so I'll turn to Whole Foods for their yummy prepared teriyaki wild salmon burgers that are on sale for $7.99 a pound. I like them served open-faced on my favorite Ezekiel bread, which is on sale for just $2.99 a loaf at both Sunflower and Vitamin Cottage right now. A platter of lettuce, tomato, and avocado will be composed from the organic leaf lettuce that's just $1 a head at Whole Foods, and from my stock of three for $1 avocados from Sunflower.

Thursday will be another quick and easy one, sauteing the pork loin chops that are $3.99 a pound at Sunflower through Wednesday (their new pork line that promises to be antibiotic-free, in addition to the usual suspects), with microwaved "baked" potatoes on the side. Through Wednesday, Sunflower has organic russets for 99 cents a pound, while Sprouts has five pound bags of them for $3.99. I've recently also caught them for an excellent 79 cents a pound at the Pearl Street Whole Foods, but keep an eye on them as they are rung up, as the cashiers have consistently rung them up as conventional, ironically at two or three times the price of the organics.

And that will get us through to Friday's planning. Watch out for snow on Wednesday!
