Very quick rundown on plans not even fully formed yet.
For tomorrow, I've caught some of those boneless skinless chicken breasts for just $1.87 a pound at the Longmont Lucky's Market grand opening sale through Wednesday. With fresh corn in season from Munson's Farm and freshly roasted Hatch chiles already available at Whole Foods, that just screams to do chicken burritos with poblano chiles and corn from Bon Appetit, using roasted chiles instead of the raw in the recipe.
Tuesday will be our reheat night, this week being tonight's bacon corn chowder with shrimp from Cooking Light, this one being driven by more of those great grand opening sales at Lucky's (on their nitrate-free house-cured bacon and also on Gulf shrimp), plus Munson's corn, of course.
For Wednesday, the last day of Lucky's grand opening sale in Longmont, we'll use more of those Gulf shrimp for shrimp Florentine pasta from Cooking Light. The Lucky's sale also has some really good deals on dried pasta, including Luigi Vitelli whole wheat ones, which I haven't seen since Sprouts bought out Sunflower.
Thursday? I just don't know yet. Maybe an easy one with the pepper jack salmon burgers on sale at Whole Foods for $7.99 a pound, although I'm loath to reenter the parking lot of the store on Pearl Street after having the side of my car badly scraped by an SUV while parked there last Friday.
